Temperature, grind, dose, tamp, pull. Get those right and you don't need a scale, a timer, or a $3,000 grinder. Get those wrong and no amount of gear will save you.
02 - Senses over numbers
The honey stream. The crema color. The yield in the cup. The sound of the machine. Your senses are enough to know good espresso.
03 - Enjoyment over perfection
A 22-second shot that tastes great is a great shot. The numbers don't drink the coffee. You do.

18 years of pulling shots. Started on the cheapest entry-level Breville. No PID, no temperature gauge, no real control. Learned everything by feel, by eye, by taste. Made a lot of bad coffee. Took notes. Made better coffee.
Eventually upgraded. Got the temperature dial. Got the better grinder. Got the Oracle.
Same fundamentals. Same daily practice. The expensive equipment makes some things easier. It doesn't make the coffee.
